Mediterranean Chicken

Short post, just a note on a great Monday Fresh 20 meal, Mediterranean Chicken. Featuring skinless bone in chicken breast, zucchini, tomatoes, green olives, raisins, red onion, bell pepper, and honey, cooked in a dutch oven, served over couscous (made with homemade veggie stock). Monday’s are usually the feature dish for the fresh 20, and this dish certainly achieved.
