Sausage, Pepper, &  Rabe Medley w/ Rice

One of the things that I like the most about Fresh 20, is that many recipes contain ingredients I have never used, and in some cases, never even heard of. This week, it featured a dish with broccoli rabe (also known as Broccoli Raab or Rapini), which, I had no idea what it was. I couldn’t even find it in the produce section until I looked it up online and discovered it under the name “rapini.”

Combining couscous (made with homemade veggie stock), tomatoes, red onions, basil, cucumber, green bell pepper, olive oil, honey, lemon juice, lemon zest, cashew pieces, and dijon mustard, I was able to enjoy one of the freshest tastes of summer!

Just bursting with juices, flavor, and cooling pleasure. This lemon herb couscous was something I likely would never have made myself, nor would I have realized how wonderfully the ingredients would come together to create a filling, yet light, refreshing dish.

I love food. Especially whole foods. You will find no hot pockets in my freezer. I do have some emergency quick meals (frozen healthy dinners, canned soups, chili, etc), but my preference is to cook whole foods into a delicious meal. I will cover this more later, but I even make my own stock out of veggie tips. It’s hard to even put frozen food away because of the volume of frozen stock, bones, and vegetable tips makes my freezer impossibly full. My freezer is a different story altogether. Let’s focus on dinner tonight.
